Potato and Artichoke Cakes: Slightly Modified A Virtual Vegan | Serves: 4 crab cakes | Time: ~45 min
Ingredients
2 cups diced potatoes
4 green onions
1/2 lime, zest & juice
1/2 inch knob of fresh ginger (I used dried ginger to taste)
1/2 tbsp coconut aminos
2 tbsp #Thai red curry paste
2 sheets nori
1/2 can hearts of palm
1/3 cup artichoke hearts
S&P to taste
According to Gluten Sugar Dairy Free LifeStyle, Thai chili paste is great for detoxing and increasing your metabolism.
Instructions
Preheat oven to 400 F.
Peel and cube the potatoes then add them to a pan. Cover with water and boil until fork tender (about 15 minutes) then drain, mash and set aside.
While the potatoes are boiling, add the green onions, lime juice, lime zest, ginger, coconut aminos and curry paste to a food processor. Break the nori sheets up into manageable pieces and put them in the food processor with the other ingredients. Process until it is a paste. The nori tends to stay a little chunkier than everything else and that is ok.
Heart of palm is a type of vegetable that is harvested from the inner core of certain species of palm trees. According to Dr. Axe, hearts of palm can aid in weight loss and regulate blood sugar. Always check the sodium count on canned hearts.
Drain the hearts of palm and either grate them, or shred them with a fork, then drain the artichokes and roughly chop. Be sure to drain them thoroughly and give the artichokes a little squeeze to get any residual liquid out of them.
According to Organic Facts, #artichokes are a thistle and not a vegetable. But just like non-veggie mushroom, artichokes provide a number of health benefits. Include artichokes in your diet to boost your metabolism, improve your liver health, and regulate your blood pressure. Mind the sodium, though!
Once the potatoes have cooled enough to handle, add the paste and stir through really well so it's evenly distributed then add the shredded hearts of palm and the chopped artichoke and stir through gently.
Place crab cakes on a tray on baking parchment and bake for around 25 minutes. Turn over half way through.
According to Dr. Axe, cilantro could be a remedy for diabetes, a disease known to wreak havoc on the kidneys.
Added Some Sauteed Red Bell Pepper to Cilantro Lime Quinoa Straight from Two Peas and Their Pods | Serves: 4 | Time: ~25 min
Ingredients
2 cups vegetable broth 1 cup #quinoa, rinsed and drained 1 clove garlic, minced 2 tbsp fresh lime juice 1/3 cup chopped cilantro 1/4 tsp granulated sugar (I used cane sugar)
2 #RedBellPepper chopped Salt and pepper, to taste
Instructions
In a large pot, combine the broth and quinoa. Bring to a boil. Cover, reduce heat, and cook until broth is evaporated and quinoa is tender, about 15 minutes. Remove from heat and let stand for 5 minutes, covered. Remove lid and fluff the quinoa with a fork.
Meanwhile saute red bell peppers in oil, season with S&P. Cook to desired firmness.
Once quinoa is cooked, add peppers, and stir in garlic, lime juice, cilantro, and sugar. Season with salt and pepper, to taste. Serve warm.
