Ingredients
4 ripe #mangoes, peeled and cut into 1-inch thick wedges
3 ripe plantains, cut into chunks
Coconut oil
1/2 cup freshly squeezed lime juice
1/2 cup finely chopped cilantro
1 tbsp dried mint
2 tbsp coconut sugar
1 jalapeno, finely chopped
1 thinly sliced shallot
Kosher salt, to taste
Lettuce
Instructions
Preheat oven to 475F.
Thread mango and plantain chunks on metal skewers. Brush with melted coconut oil. Bake for 10 minutes. Be careful when you open the oven. Mango is juicy and creates A LOT of steam.
Mix lime juice through salt in a bowl until sugar is completely disolved. Toss baked mango and plantains. Serve on a bed of lettuce. Enjoy!
