I've been trying to buy soba noodles at my local grocery store for WEEKS, and nada! So fine, let's do this thing with ramen.

Changes: ramen instead of soba noodles; didn't have chilis to add; added some steamed broccoli on top
Ingredients
6 oz ramen noodles
1 medium ripe #avocado, halved, pitted, and peeled
1/2 cup lightly packed baby #spinach
2-3 tbsp lightly packed cilantro
1 medium clove garlic
1 1/2 tbsp lime juice
1 1/2 tbsp water
1 tbsp avocado oil
2 tsp sesame oil
S&P, to taste
For Serving
Additional cilantro
Sesame seeds
Sriracha
I also had some broccoli and tomatoes on hand that was turning soon, so why not?
Add whatever you like, you know?
Instructions
Cook the noodles according to package and cook any other food you want to serve the noodles with.
Meanwhile make the sauce. Add the remaining ingredients to a blender. Blend until smooth and creamy, about 30-60 seconds. Season with salt and pepper to taste.
Drain the noodles, then transfer them to a large serving bowl. Pour the sauce over the top and toss to coat. Serve immediately with toppings of choice.
