Changes: used steam fresh frozen peas instead of fresh; replaced cucumber with zucchini
Ingredients
16 oz frozen #peas
2 medium-large ripe #avocados
2 tbsp EVO
1 Serrano pepper, stem removed and sliced in half
1 medium shallot, peeled and chopped in half
1 medium #zucchini, very roughly chopped
1 cup fresh cilantro
3 tbsp freshly squeezed lime juice, plus more to taste
1 1/2 – 2 cups water, plus more as needed
1/2 cup coconut milk
A generous amount of kosher salt and freshly cracked black pepper
Instructions
Steam the peas in the microwave. Add them to a blender with the the remaining ingredients. Pop in the fridge until ready to serve. Garnish with whatever you'd like. I did pepitas.
