Holy F*CK are #cherries expensive! Always, always, ALWAYS look at price tags of any "common enough" food item. Jayzus!
Anyway...this was a bit weird, but very delicious. If cherries ever dip in price again, I'll definitely give it a go.

Changes: used gluten free pasta; replaced almond milk with coconut milk; used just walnuts since I can't have cashews or almonds; used basil paste instead of fresh basil
Ingredients
4 servings gluten-free penne (I used cassava flour based)
1/2 cup coconut milk
1 #avocado
1 handful #walnuts
1 tbsp nutritional yeast
1 tsp tahini
1 tbsp lemon juice
1 clove garlic
2 tbsp Gourmet Gardens basil paste
S&P, to taste
15 cherries, pitted and halved
2 cups #spinach, roughly chopped
Instructions
Cook pasta according to package instructions.
Meanwhile, blend coconut milk, avocado, walnuts, nuritional yeast, tahini, lemon juice, garlic, basil paste, and S&P to taste. Set aside.
When the pasta is ready, drain it and return it to the pot. Add the sauce and combine well, and then the cherries and spinach with a few more stirs. Plate and enjoy!
