Ingredients
2 russet #potatoes, peeled, washed and quartered
1 #avocado, peeled and pitted
1/3 cup coconut milk
1/2 tsp lemon
1/2 tsp salt
1/2 tsp garlic powder
Instructions
Place potatoes in a large pot of salted water and cover. Bring to a boil and cook for 15 min or until potatoes are tender.
When cooked through, drain potatoes and transfer them to a large bowl along with the avocado.
Mash the potatoes and avocado while slowly adding milk and lemon juice. Finish with salt and garlic powder to taste.
I topped with a corn, pepper, and onion mix. Why not?
