This isn't quick and easy for sure, but if you have the time, enjoy my favorite pizza crust via Blissful Basil. The crust takes an hour or so, and the rest is less than 30 min. Not too labor intensive, if that's any consolation.
Crust is slightly modified from Blissful Basil | Makes: 1 crust | Time: 1 hour
Ingredients
5 1/2 cups (28 ounces) peeled and small-cubed #SweetPotatoes
1 Neat Egg
1 1/4 cup gluten-free oat flour
1/4 cup almond or flax meal
1 tbsp EVO
1 tbsp apple cider vinegar
1 tsp dried basil
1 tsp dried oregano
1 1/4 tsp garlic powder
1/2 tsp salt
Pinch of chili flakes
Instructions
Steam the potatoes.
Preheat oven to 400F.
Add the steamed sweet potatoes to a large mixing bowl and mash them. Stir in remaining ingredients until well combined.
Line a round perforated pizza pan with parchment paper.
Scoop the sweet potato dough onto the parchment paper lined pizza pan, and use a spatula to spread it into a large 1/4-inch-thick to 1/3-inch-thick oval or circle. This process takes 5 minutes. If needed, lightly grease the spatula with olive oil to prevent the crust from sticking.
Bake for 25 minutes. While this is baking prep your toppings from the Ela Vegan recipe below.
Remove from the oven and let cool slightly.

Ingredients
Sauce
2 tbsp cooking oil
1/2 cup #tomato pizza sauce (I found this brand has the least sodium, fat, and calories)
4 tbsp cashew milk
1 tbsp balsamic or apple cider vinegar (I used apple cider vinegar)
1 tbsp hot sauce
1 tsp brown sugar
1 tsp each of smoked paprika, onion powder, garlic powder
S&P, to taste
Other Ingredients
1 batch of vegan cheese sauce
1 #avocado
1 15 oz can #chickpeas
Instructions
To make the sauce, mix 1 tbsp oil and all other sauce ingredients in a bowl with a whisk.
Spread the sauce (but save 3-4 tbsp) on the sweet potato pizza crust and put the pizza in the oven for 5 minutes.
Heat 1 tbsp oil in a skillet, add the remaining 3-4 tbsp of sauce and the chickpeas and fry for 3-5 minutes over medium heat.
Spread the chickpea mixture and the vegan cheese sauce onto the pizza and put it back into the oven for another 10 minutes.
Peel the avocado, remove the stem, and cut it into pieces and put it on the pizza right before serving.
