I guess this is meant for lunch or a casual dinner, but I was happy to have it as breakfast. Hoping it proves to be a good base for a couple hours of hiking, plus detoxing from last night's dips and desserts can only be a good thing.
Slightly Modified a Brewing Happiness Recipe | Serves: 2 | Time: ~20 min
Ingredients
4-5 butter #lettuce leaves
3-4 large #carrots, shredded
1 tbsp #AlmondButter
2 tbsp light coconut milk
1 tsp Chinese 5 spice
2 tbsp coconut aminos, divided
1 medium ripe #avocado
1-2 tbsp sriracha
2 tbsp nutritional yeast
Toasted sesame seeds for garnish
Instructions
Layer the butter lettuce at the bottom of 2 bowls. Or, use individual leaves as little wraps.
In a separate bowl add the carrots, coconut milk, almond butter & 1 tablespoon of coconut aminos. Mix until the carrots are evenly coated. Layer the carrot mixture on top of the lettuce.
Wash out the carrot bowl or get a new bowl out. In this bowl, add the avocado, sriracha, the remaining 1 tablespoon of coconut aminos and nutritional yeast. Mix until it looks like guacamole.
Place the avocado mixture on top of the lettuce and carrots. Enjoy!
