Apple Cinnamon Waffles

Today's vegan breakfast/brunch features apples! Okay, only one apple goes into the waffles, but if you throw some more chopped apple on top, you're getting a full apple in your belly. Better than just flour, right?


What I changed:


  • Replaced flax seeds with flax meal

  • Replaced maple syrup with half as much dolcedi. Dolcedi is made from apples, so it seemed appropriate.

  • Used whole wheat flour instead of gluten free. I have gluten free flours on hand, but of varying density, and I thought whole wheat flour would be less risky. The end result was pretty thick, but I think oat flour would be even thicker, and brown rice would be dense. Maybe chickpea would have worked?

Ingredients

1 1/2 cups unsweetened plant-based milk (I have almond on hand)

1/4 cup melted coconut oil

2 tsp vanilla

2 tbsp flax meal

1/2 tbsp dolcedi

1/2 cup unsweetened, plain applesauce

2 cups whole wheat flour

1 tbsp baking powder

1/2 tsp baking soda

1 1/2 tsp cinnamon

1/4 tsp salt

1 small #apple, peeled and chopped


Instructions

Turn on/preheat your waffle maker according to manufacturer's instructions


Whisk almond milk, coconut oil, flax meal, dolcedi syrup, and applesauce together in a medium-sized bowl. Let sit for 5-minutes.


Whisk flour, baking powder, baking soda, cinnamon, and salt together in a large bowl.

Slowly add wet ingredients to the dry ingredients, mixing well until incorporated.


Add in chopped apples and stir.


Ladle enough waffle mixture into your waffle maker so the bottom of the waffle maker is filled. Close waffle maker and cook according to your maker's directions.


Serve with toppings of choice. I added some more apples as well as some pecans
