Straight from Veganosity | Serves: 3-4| Time: ~10 min
Ingredients
1 15 ounce can of Great Northern white beans – drained, rinsed, and patted dry (I used cannellini #beans)
3 large palm hearts – coarsely chopped (mine were rather large, so I only used two)
½ red bell pepper – finely chopped
1 large stalk of celery – finely chopped
¼ cup of finely chopped red onion
2 tablespoons of minced fresh dill (I used dried dill)
2 teaspoons of Old Bay seasoning
2 tablespoons of German style mustard or creamy Dijon mustard
Ground sea salt and black pepper to taste
Quick Note on Sodium: Canned palmed hearts tend to be extremely high in sodium. A store-brand usually will be over 20% of your daily nutritional value. Best to pay more for an organic brand. The one I bought had only 3% the daily recommended nutritional value. Kidney failure is probably more expensive than a canned food you buy every once in a while for a #lunch time treat.
Instructions
Mash the beans in a medium bowl until you don’t see any whole beans. Add the chopped palm hearts, bell pepper, onion, celery, dill, Old Bay seasoning, mustard, and salt and pepper and stir to combine. Add more seasoning if you like.
